Sanctuary is founded by Rohini Dey, PhD, founder Vermilion & Let’s Talk Womxn, former McKinsey & Co. and The World Bank. Over its 21-year run in Chicago and 10 years in NYC, Vermilion earned widespread acclaim including Best Restaurants from Travel & Leisure, Town & Country, Esquire, USA Today, Bon Appétit, and 3 Stars by the Chicago Tribune. Rohini founded and chaired the James Beard Foundation women's leadership program for a decade. Sanctuary's cuisine is based on Rohini's travels and vision. Vermilion's former lead chef and 2015 JBF women's leadership mentee Chef Suprapti leads the culinary execution.
